Oh, God, no.
Zombies?
Spare me.
There are only four zombie experiences worth your time:
1. Shaun of the Dead - duh!
2. 28 Days Later - but only because it's necessary in order to understand 28 Weeks Later ¹.
3. 28 Weeks Later - because it's not actually about zombies, but human self-centredness.
4. Perished ² - because it's the only film to portray what would actually happen (best zombie film ever!).
If you’re prepared to stretch the definition of ‘zombie’ then there’s Young Frankenstein as well.
But that’s a stretch-and-a-half alright — the ‘monster’ is constructed before being reanimated.

¹ Fair enough, I’ll give 28 Days Later an extra pass, because it portrays not only how and why a zombie apocalypse would come about, but also that it wouldn’t result in zombies as they are usually portrayed: they’re not undead, but infected with a virus (a la Shaun of the Dead).
² Stefan A. Radanovich and Aaron McCann.
